Shrimp & Beef Stir-Fry Noodles

Ingredients

8 oz egg noodles or rice noodles
12 large shrimp, peeled and deveined
8 oz beef sirloin, thinly sliced
1 cup baby spinach
1 large carrot, julienned
1 bell pepper, sliced
2 tbsp soy sauce
1 tbsp oyster sauce
1 tbsp hoisin sauce
1 tbsp sesame oil
2 tbsp vegetable oil
2 cloves garlic, minced
Salt and pepper to taste
Green onions for garnish (optional)

Cook the noodles: Prepare the noodles according to package instructions, drain, and set aside.
Stir-fry the beef: Heat 1 tablespoon of vegetable oil in a large pan or wok over medium-high heat. Add the beef and stir-fry for 2-3 minutes until browned. Remove the beef from the pan and set aside.
Cook the shrimp: In the same pan, add another tablespoon of vegetable oil. Add the shrimp and cook for 2 minutes on each side, until pink and cooked through. Remove the shrimp and set aside.
Sauté the vegetables: Add the garlic, carrots, and bell pepper to the pan, stir-frying for 2-3 minutes until the vegetables begin to soften.
Combine everything: Return the beef and shrimp to the pan. Add the spinach, soy sauce, oyster sauce, hoisin sauce, sesame oil, and cooked noodles. Toss everything together for 2-3 minutes until heated through and well coated in the sauce.
Serve: Plate the stir-fry, garnish with green onions, and serve immediately.
