Mexican Picadillo Soup
Ingredients:
1 lb ground beef ๐
3 medium potatoes (peeled and diced) ๐ฅ
1 medium onion (chopped) ๐ง
2 cloves garlic (minced) ๐ง
2 cups diced tomatoes ๐
4 cups beef broth ๐ฅฃ
1 cup tomato sauce ๐
1 tbsp olive oil ๐ฅ
1 tsp cumin ๐ฟ
1/2 tsp paprika ๐
1 tsp chili powder ๐ถ๏ธ
1/2 tsp salt & pepper ๐ง
1/4 cup fresh cilantro (chopped) ๐ฟ
1 avocado (cubed) ๐ฅ
1/2 cup shredded cheese ๐ง
Instructions:
Sautรฉ Aromatics:
Heat olive oil in a large pot over medium heat. Add onions and garlic, sautรฉ until fragrant.
Cook the Meat:
Add ground beef to the pot, breaking it apart while cooking until browned.
Build the Base:
Stir in diced tomatoes, tomato sauce, cumin, paprika, chili powder, salt, and pepper. Cook for 5 minutes to meld the flavors.
Simmer the Soup:
Add diced potatoes and beef broth. Bring to a boil, then reduce heat to low. Cover and let simmer for 20-25 minutes or until potatoes are tender.
