Mexican Picadillo Soup
Ingredients:
1 lb ground beef π
3 medium potatoes (peeled and diced) π₯
1 medium onion (chopped) π§
2 cloves garlic (minced) π§
2 cups diced tomatoes π
4 cups beef broth π₯£
1 cup tomato sauce π
1 tbsp olive oil π₯
1 tsp cumin πΏ
1/2 tsp paprika π
1 tsp chili powder πΆοΈ
1/2 tsp salt & pepper π§
1/4 cup fresh cilantro (chopped) πΏ
1 avocado (cubed) π₯
1/2 cup shredded cheese π§
Instructions:
SautΓ© Aromatics:
Heat olive oil in a large pot over medium heat. Add onions and garlic, sautΓ© until fragrant.
Cook the Meat:
Add ground beef to the pot, breaking it apart while cooking until browned.
Build the Base:
Stir in diced tomatoes, tomato sauce, cumin, paprika, chili powder, salt, and pepper. Cook for 5 minutes to meld the flavors.
Simmer the Soup:
Add diced potatoes and beef broth. Bring to a boil, then reduce heat to low. Cover and let simmer for 20-25 minutes or until potatoes are tender.
