Mexican Picadillo Soup

Ingredients:

2 cups diced tomatoes ๐Ÿ…

1 tsp cumin ๐ŸŒฟ
1/2 tsp paprika ๐ŸŒŸ
1 tsp chili powder ๐ŸŒถ๏ธ
1/2 tsp salt & pepper ๐Ÿง‚
1/4 cup fresh cilantro (chopped) ๐ŸŒฟ
1 avocado (cubed) ๐Ÿฅ‘
1/2 cup shredded cheese ๐Ÿง€
Instructions:
Sautรฉ Aromatics:

Heat olive oil in a large pot over medium heat. Add onions and garlic, sautรฉ until fragrant.
Cook the Meat:

Add ground beef to the pot, breaking it apart while cooking until browned.
Build the Base:

Stir in diced tomatoes, tomato sauce, cumin, paprika, chili powder, salt, and pepper. Cook for 5 minutes to meld the flavors.
Simmer the Soup:

Add diced potatoes and beef broth. Bring to a boil, then reduce heat to low. Cover and let simmer for 20-25 minutes or until potatoes are tender.
Garnish & Serve:
