Red Snapper with Creamy Creole Sauce

Here’s how to make it:

Ingredients:
4 red snapper fillets (about 6 oz each)
2 tbsp olive oil
Salt and pepper to taste
1 tsp paprika
1 tsp garlic powder
1/2 tsp cayenne pepper (optional)

For the Creamy Creole Sauce:
2 tbsp unsalted butter
1 small onion (finely chopped)
1 bell pepper (red or green, finely chopped)
2 cloves garlic (minced)
1 can (14.5 oz) diced tomatoes with juice
1/2 cup heavy cream
1 tsp Creole seasoning
1/2 tsp dried thyme
1/4 tsp black pepper
2 green onions (sliced for garnish)
Fresh parsley (chopped for garnish)

Instructions:

Preparation:
Pat the red snapper fillets dry and rub with olive oil. Season with salt, pepper, paprika, garlic powder, and cayenne pepper if desired.

Cooking:
Heat olive oil in a large skillet over medium-high heat. Cook the seasoned red snapper fillets for about 4-5 minutes per side until flaky. Remove and set aside.

In the same skillet, melt the butter on medium heat. Sauté the onion and bell pepper until softened, then add garlic and cook for another minute. Stir in diced tomatoes, heavy cream, Creole seasoning, thyme, and black pepper. Simmer for about 5 minutes until the sauce thickens.

Return the red snapper to the skillet, spooning sauce over the fish. Simmer for an additional 2-3 minutes to heat through.
