Garlic Butter Steak Bites and Mash
Ingredients:
For the steak bites:
– 1 lb sirloin steak, cut into bite-sized cubes
– 2 tablespoons olive oil
– 2 tablespoons unsalted butter
– 4 cloves garlic, minced
– Salt and pepper to taste
– Fresh parsley, chopped (for garnish)
For the mashed potatoes:
– 2 lbs potatoes, peeled and cubed
– 1/2 cup milk or cream (adjust as needed)
– 4 tablespoons unsalted butter
– Salt and pepper to taste
Directions:
1. **Prepare the mashed potatoes:**
– Boil the cubed potatoes in salted water for about 15 minutes or until fork-tender. Drain the water.
– Mash the potatoes with butter and milk until smooth. Season with salt and pepper to taste. Cover and set aside.
2. **Cook the steak bites:**
– Heat olive oil in a large skillet over medium-high heat. Add the steak bites in a single layer and season with salt and pepper. Sear each side for about 2-3 minutes until golden brown. Remove the steak bites and set aside.
3. **Make the garlic butter sauce:**
– In the same skillet, lower the heat to medium and add the butter. Stir in the minced garlic and sauté until fragrant, about 30 seconds.
4. **Combine:**
– Return the steak bites to the skillet and toss to coat in the garlic butter sauce. Let it heat for 1 minute.
5. **Serve:**
– Plate the mashed potatoes and top with the steak bites. Drizzle the remaining garlic butter sauce from the skillet over the dish. Garnish with fresh parsley.
