THANKSGIVING HONEY MUSTARD GLAZED CHICKEN

INGREDIENTS:
For the Chicken:
🍗 1 whole chicken (4-5 lbs)
🧂 1 teaspoon salt
🌶️ 1 teaspoon black pepper
🧄 2 garlic cloves, minced
🫒 2 tablespoons olive oil
For the Honey Mustard Glaze:
🍯 1/4 cup honey
🥢 2 tablespoons Dijon mustard
🍋 Juice of 1 lemon
🧄 1 garlic clove, minced
🌿 1 teaspoon fresh thyme, chopped
🫒 1 tablespoon olive oil
For the Roasting Pan:
🥕 2 carrots, chopped
🥔 2 potatoes, cubed
🧅 1 onion, quartered
1 cup chicken broth
INSTRUCTIONS:
STEP 1: PREPARE THE CHICKEN
Season Chicken: Preheat the oven to 375°F (190°C). Pat the chicken dry with paper towels and rub it with olive oil, garlic, salt, and pepper. Place it in a roasting pan.
STEP 2: MAKE THE GLAZE
Combine Ingredients: In a small bowl, whisk together honey, Dijon mustard, lemon juice, garlic, thyme, and olive oil until smooth.
STEP 3: PREPARE THE ROASTING PAN
Arrange Vegetables: Surround the chicken with carrots, potatoes, and onion. Pour chicken broth into the pan to keep the chicken moist.
STEP 4: ROAST AND GLAZE
Roast: Cook the chicken in the preheated oven for 1 1/2 to 2 hours, basting with the honey mustard glaze every 20 minutes. The chicken is done when the internal temperature reaches 165°F (74°C).
STEP 5: REST AND SERVE
Rest: Remove the chicken from the oven and let it rest for 10-15 minutes before carving.
