4 boneless, skinless chicken breasts
Salt and black pepper, to taste
2 tbsp olive oil
1 tbsp butter
3 cloves garlic, minced
1 cup heavy cream
1 cup chicken broth
1/2 cup grated Parmesan cheese
1/2 cup sun-dried tomatoes, chopped
1 tsp dried oregano
1 tsp dried thyme
1/4 tsp red pepper flakes (optional)
Fresh basil, chopped, for garnish
12 oz pasta (fettuccine or penne work great)
Directions:
Prepare Chicken: Season the chicken breasts with salt and pepper. In a large skillet, heat olive oil over medium-high heat. Add the chicken and cook for 5-7 minutes per side, or until golden brown and cooked through. Remove from skillet and set aside.
Make Sauce: In the same skillet, add the butter and garlic, cooking for about 1 minute until fragrant. Stir in the heavy cream, chicken broth, Parmesan, sun-dried tomatoes, oregano, thyme, and red pepper flakes. Bring to a simmer, stirring occasionally until the sauce thickens (about 5 minutes).
Cook Pasta: While the sauce simmers, cook pasta according to package directions. Drain and set aside.
