Skillet Spinach Lasagna

Ingredients:

– 9 lasagna noodles
– 2 tablespoons olive oil
– 1 small onion, diced
– 3 cloves garlic, minced
– 5 cups fresh spinach, roughly chopped
– 1 teaspoon dried oregano
– 1 teaspoon dried basil
– Salt and pepper to taste
– 1 jar (24 oz) marinara sauce
– 15 oz ricotta cheese
– 1 cup shredded mozzarella cheese
– 1/2 cup grated Parmesan cheese
– Fresh basil leaves for garnish (optional)

Instructions:

1. Cook the Lasagna Noodles:

– In a large pot of boiling salted water, cook the lasagna noodles according to package instructions until al dente. Drain and set aside.

2. Sauté the Vegetables:

– In a large skillet, heat the olive oil over medium heat.
– Add the diced onion and sauté for about 3-4 minutes until translucent.
– Stir in the minced garlic and cook for an additional 1 minute until fragrant.

3. Add Spinach and Seasonings:

– Add the chopped spinach to the skillet and cook until wilted, about 3-4 minutes.
– Sprinkle in the dried oregano, dried basil, salt, and pepper. Mix well.

4. Layer the Ingredients:

– Pour half of the marinara sauce over the spinach mixture, spreading it evenly.
– Break the lasagna noodles into pieces and layer them on top of the sauce.
– Spoon dollops of ricotta cheese over the noodles, followed by the remaining marinara sauce.

5. Add Cheese and Cook:

– Sprinkle the shredded mozzarella cheese and grated Parmesan cheese evenly over the top.
– Cover the skillet with a lid and cook on low heat for about 15-20 minutes, or until the cheese is melted and bubbly.

6. Serve:

– Once cooked, remove from heat and let it sit for a few minutes.
– Garnish with fresh basil leaves if desired before serving.
