CRISPY BATTERED COD AND ONION RINGS PLATTER WITH FRIES
This ultimate platter of crispy, golden battered cod, onion rings, and fries is a classic pub-style favorite. Perfectly crunchy on the outside and tender on the inside, it’s a satisfying meal that’s easy to recreate at home!
Ingredients
Battered Cod
4 cod fillets
Salt and pepper, to taste
1 cup all-purpose flour
1 cup cold sparkling water (or beer for a beer batter)
1 tsp baking powder
Oil, for frying

Onion Rings
2 large onions, sliced into thick rings
1 cup buttermilk
1 cup all-purpose flour
1/2 cup cornstarch
Salt and pepper, to taste
1/2 tsp paprika (optional, for extra flavor)
Fries
4 large russet potatoes, cut into thick fries
Salt, to taste
Oil, for frying
Instructions
Prepare the Fries: Rinse cut potatoes in cold water to remove excess starch, then pat dry. Heat oil in a deep fryer or large pot to 300°F (150°C). Fry the potatoes in batches for 3-4 minutes until just soft but not browned. Remove and drain on paper towels.
Prepare the Batter for Cod: In a mixing bowl, whisk together flour, baking powder, salt, and pepper. Gradually add cold sparkling water or beer, whisking until smooth and lump-free.
Coat and Fry the Cod: Season cod fillets with salt and pepper. Lightly coat each fillet in flour, then dip into the batter, allowing excess to drip off. Heat oil to 375°F (190°C), then fry cod fillets for 5-7 minutes or until golden and crispy. Drain on paper towels.
Prepare the Onion Rings: Soak onion rings in buttermilk for at least 10 minutes. In a separate bowl, combine flour, cornstarch, salt, pepper, and paprika. Coat each ring in the flour mixture.
Fry the Onion Rings: Fry the onion rings in batches until golden and crispy, about 2-3 minutes per batch. Drain on paper towels.
Finish the Fries: Increase oil temperature to 375°F (190°C). Fry the potatoes a second time for 2-3 minutes until golden and crispy. Drain on paper towels and season with salt.
Serve: Arrange the battered cod, onion rings, and fries on a large platter. Serve hot with lemon wedges, tartar sauce, or malt vinegar.
