Slow Cooker Tuscan Beef Roast

Ingredients :

2 pound beef chuck roast
1 tablespoon of olive oil
1 chopped onion
2 chopped carrots
2 stalks of celery, chopped
3 minced garlic cloves
2 cups of beef broth
1 (14 ounce) can of crushed tomatoes
1 teaspoon of dried rosemary
1 teaspoon of dried thyme
Salt and pepper to taste
2 tablespoons fresh parsley, chopped for garnish
Itinéraires :

In a large saucepan, heat the olive oil over medium-high heat. Season the beef with salt and pepper and simmer in the pot until it is brown on all sides
Remove the beef and add onion, carrots, celery and garlic. Cook until vegetables are tender, about 5 minutes.
Return the beef in the crock pot and add the beef broth, crushed tomatoes, rosemary and thyme.
Bring to boil, then reduce heat to low and cover. Simmer for 3-4 hours or until beef is tender and fall apart easily.
Shred beef in crock pot and mix with gravy.
Garnish with chopped parsley before serving.
