CRISPY BATTERED COD AND ONION RINGS PLATTER

Ingredients:
For the Battered Cod:

1 lb cod fillets, cut into portions
1 cup all-purpose flour
1/4 cup cornstarch
1 tsp baking powder
1/2 tsp paprika
Salt and pepper, to taste
1 cup cold sparkling water
Oil for frying
For the Onion Rings:

2 large onions, sliced into thick rings
1 cup all-purpose flour
1/4 cup cornstarch
1/2 tsp paprika
Salt and pepper, to taste
1 cup cold sparkling water
Instructions:
Heat the Oil:

In a large, deep skillet or pot, heat oil to 350°F (175°C) for frying.
Prepare the Batter for Cod:

In a medium bowl, mix flour, cornstarch, baking powder, paprika, salt, and pepper. Gradually whisk in the cold sparkling water until the batter is smooth.
Batter and Fry the Cod:

Dip each piece of cod into the batter, letting excess drip off. Carefully place in the hot oil and fry for 4-5 minutes, or until golden brown and crispy. Remove and drain on paper towels.
Prepare the Batter for Onion Rings:

In a separate bowl, combine flour, cornstarch, paprika, salt, and pepper. Add cold sparkling water and whisk until smooth.
Dip each onion ring into the batter, allowing excess to drip off, and carefully place in the hot oil.
Fry the Onion Rings:

Fry the onion rings until golden and crispy, about 2-3 minutes per side. Remove and drain on paper towels.
Serve the Platter:

Arrange the crispy cod and onion rings on a serving platter. Serve with lemon wedges and tartar sauce or your favorite dipping sauces.
