Garlic Parmesan Chicken and Potatoes

Ingredients
4 bone-in, skin-on chicken thighs (or breasts)
1 lb baby potatoes, halved
1/4 cup olive oil
1 tablespoon minced garlic (about 3 cloves)
1 teaspoon Italian seasoning
1/2 teaspoon paprika
Salt and pepper, to taste
1/2 cup grated Parmesan cheese
2 tablespoons fresh parsley, chopped (for garnish)
Instructions
Preheat the Oven:

Preheat your oven to 400°F (200°C).
Prepare the Chicken and Potatoes:

In a large mixing bowl, combine olive oil, minced garlic, Italian seasoning, paprika, salt, and pepper.
Add the chicken thighs and baby potatoes to the bowl. Toss until everything is well coated with the oil and seasoning mixture.
Arrange in Baking Dish:

Transfer the chicken and potatoes
to a baking dish or a large sheet pan, arranging them in a single layer.
Add Parmesan:

Sprinkle the grated Parmesan cheese evenly over the chicken and potatoes.
Bake:

Bake in the preheated oven for 35-45 minutes, or until the chicken is cooked through (internal temperature reaches 165°F or 75°C) and the potatoes are tender and golden.
Garnish and Serve:

Remove from the oven and let it re
st for a few minutes. Garnish with chopped parsley before serving.
Tips
For extra crispy skin, you can broil the dish for the last 2-3 minutes of cooking, keeping a close eye to avoid burning.
