Cowboy Meatloaf and Potatoes Casserole recipe
Ingredients
Meatloaf: 1 lb ground beef, 1/2 cup breadcrumbs, 1/4 cup chopped onion, 1/4 cup milk, 1 egg, 2 tbsp Worcestershire sauce, 1 tsp garlic powder, salt, and pepper.
Potato Topping: 4 russet potatoes (cubed), 1/4 cup butter, 1/2 cup milk, 1 cup shredded cheddar, salt, and pepper.
Toppings: 1/2 cup bacon (cooked, crumbled), 1/4 cup green onions.
Instructions
1. Preheat oven to 375°F (190°C). Grease a 9×13-inch dish.
2. Meatloaf Layer: Mix beef, breadcrumbs, onion, milk, egg, Worcestershire sauce, garlic powder, salt, and pepper. Press into the dish and bake for 20 minutes.
3. Potatoes: Boil potatoes until tender. Mash with butter and milk. Season with salt and pepper.
4. Assemble: Spread mashed potatoes over the meatloaf. Top with cheese, bacon, and green onions.
5. Bake for 15-20 more minutes. Rest for 5 minutes and serve.
