BBQ Brisket with Cheddar Cheese
Ingredients:
3-4 lbs beef brisket
2 tbsp olive oil
2 tbsp smoked paprika
2 tbsp brown sugar
1 tbsp garlic powder
1 tbsp onion powder
2 tsp ground cumin
2 tsp black pepper
2 tsp salt
1 cup beef broth
2 cups BBQ sauce (your choice)
2 cups shredded cheddar cheese
Directions:
Prepare the Brisket: Preheat your oven to 300°F (150°C). Rub the brisket with olive oil. In a small bowl, combine the smoked paprika, brown sugar, garlic powder, onion powder, cumin, black pepper, and salt. Rub this mixture all over the brisket, making sure it’s well-coated.
Slow Cook the Brisket: Place the seasoned brisket in a roasting pan. Pour the beef broth around the brisket to keep it moist while cooking. Cover the pan tightly with foil. Cook for 4-5 hours, or until the brisket is tender and easily shredded with a fork.
Shred and Add Sauce: Once the brisket is done, remove it from the oven and let it rest for 10 minutes. Shred the brisket into large pieces. Pour the BBQ sauce over the top of the brisket and return it to the oven, uncovered, for 15-20 minutes to let the sauce caramelize slightly.
Top with Cheddar Cheese: Remove the brisket from the oven and sprinkle the shredded cheddar cheese generously over the top. Place it back in the oven for another 5-10 minutes, or until the cheese is fully melted and bubbling.
Serve: Slice or pull the brisket into portions, making sure to spoon some of the melted cheese and BBQ sauce over each serving. Serve with your favorite sides like mashed potatoes, coleslaw, or cornbread.
