Loaded Shepherd’s Pie Casserole

Ingredients:

1 lb ground beef

1/2 cup onion, diced

1/2 cup carrots, diced

1/2 cup peas

1/2 cup corn

2 cups mashed potatoes (prepared)

1 cup shredded cheddar cheese

1/2 cup cooked bacon, crumbled

Salt and pepper to taste

Chopped green onions for garnish

Instructions:

1️⃣ Preheat Oven: Set your oven to 400°F (200°C).

2️⃣ Cook the Beef Mixture: In a skillet over medium heat, cook the ground beef and diced onion until the meat is browned and the onion is soft. Drain any excess grease. Add in carrots, peas, and corn, and cook until they’re tender. Season with salt and pepper to taste.

3️⃣ Assemble the Casserole: Spread the beef mixture evenly in the bottom of a baking dish. Layer the prepared mashed potatoes over the beef mixture.

4️⃣ Top with Cheese and Bacon: Sprinkle shredded cheddar cheese over the mashed potatoes, followed by the crumbled bacon.

5️⃣ Bake: Place in the oven and bake for about 15-20 minutes, or until the cheese is melted and bubbly.

6️⃣ Garnish and Serve: Remove from the oven and sprinkle with chopped green onions. Serve hot and enjoy!
