These sizzling Steak Fajitas are a delicious and easy way to bring the flavors of Mexico to your table. Marinated, grilled steak combined with colorful peppers and onions creates a vibrant dish that’s perfect for any gathering or a fun family dinner!
Ingredients:
For the Steak Marinade:
1.5 lbs flank steak (or skirt steak)
1/4 cup olive oil
1/4 cup soy sauce
2 tablespoons lime juice
2 tablespoons Worcestershire sauce
2 cloves garlic, minced
1 teaspoon chili powder
1 teaspoon cumin
1/2 teaspoon smoked paprika
Salt and pepper, to taste
For the Fajitas:
1 red bell pepper, sliced
1 green bell pepper, sliced
1 yellow onion, sliced
1 tablespoon olive oil
Fresh cilantro, for garnish
Lime wedges, for serving
Flour or corn tortillas, for serving
Instructions:
1. Marinate the Steak:
In a bowl, whisk together olive oil, soy sauce, lime juice, Worcestershire sauce, garlic, chili powder, cumin, smoked paprika, salt, and pepper.
Place the flank steak in a resealable plastic bag or shallow dish and pour the marinade over it. Seal or cover and refrigerate for at least 1 hour, preferably 2-4 hours for maximum flavor.
2. Prepare the Vegetables:
While the steak is marinating, prepare the bell peppers and onion. In a large skillet, heat 1 tablespoon of olive oil over medium-high heat.
Add the sliced peppers and onion, sautéing for about 5-7 minutes, or until they are tender and slightly charred. Season with salt and pepper to taste. Remove from heat and set aside.
3. Cook the Steak:
Preheat a grill or grill pan over medium-high heat. Remove the steak from the marinade and discard the excess marinade.
Grill the steak for about 4-5 minutes on each side for medium-rare, or until it reaches your desired doneness. Use a meat thermometer for accuracy (130°F for medium-rare).
Once cooked, let the steak rest for 5-10 minutes before slicing it thinly against the grain.
4. Assemble the Fajitas:
Serve the sliced steak on a platter with the sautéed peppers and onions.
Garnish with fresh cilantro and lime wedges.
5. Serve:
Warm your tortillas on the grill or in a skillet. Assemble the fajitas by placing some steak and vegetables on a tortilla and adding any desired toppings like salsa, guacamole, or sour cream.
