Garlicky Steak and Golden Potatoes
Ingredients:
For the Steak:
2 ribeye or sirloin steaks (about 1-inch thick)
4 garlic cloves, minced
2 tbsp olive oil
1 tbsp butter
Salt and pepper to taste
Fresh rosemary or thyme (optional)
For the Potatoes:
1 lb baby potatoes (halved)
2 tbsp olive oil
3 garlic cloves, minced
1 tsp dried oregano
1 tsp smoked paprika
Salt and pepper to taste
Fresh parsley for garnish (optional)
Instructions:
1. Prepare the Potatoes:
Preheat the oven to 400°F (200°C).
In a large bowl, toss the halved baby potatoes with olive oil, minced garlic, oregano, paprika, salt, and pepper.
Spread the potatoes evenly on a baking sheet and roast for about 25-30 minutes, or until golden and crispy. Stir halfway through for even roasting.
2. Cook the Steak:
While the potatoes are roasting, pat the steaks dry with paper towels and season generously with salt and pepper on both sides.
Heat 2 tbsp of olive oil in a cast-iron skillet over medium-high heat.
Add the steaks to the hot skillet and cook for about 3-4 minutes on each side for medium-rare, or adjust cooking time based on your preferred doneness.
During the last minute of cooking, add butter and minced garlic to the skillet, spooning the garlicky butter over the steaks for extra flavor.
If using fresh rosemary or thyme, add it to the skillet for aromatic flavor.
3. Rest the Steak:
Once the steaks are cooked to your liking, remove them from the skillet and let them rest for 5 minutes to allow the juices to redistribute.
4. Serve:
Slice the steaks and serve alongside the roasted garlicky potatoes.
Garnish the potatoes with fresh parsley if desired and drizzle any extra garlicky butter from the skillet over the steak for extra flavor.
