Garlic Butter Steak Bites and Cheesy Smashed Potatoes
Ingredients:
For the Steak Bites:
1 lb sirloin steak, cut into bite-sized pieces
Salt and pepper, to taste
1 tbsp olive oil
3 tbsp butter
4 cloves garlic, minced
Fresh parsley, chopped (for garnish)
For the Cheesy Smashed Potatoes:
1 lb baby potatoes
Salt, to taste
2 tbsp olive oil
1 cup shredded cheddar cheese
Fresh chives, chopped (for garnish)
Instructions:
Prepare Potatoes: Preheat oven to 425°F (220°C). Boil potatoes in salted water until tender, about 15 minutes. Drain and place on a baking sheet.
Smash Potatoes: Gently smash each potato with a fork. Drizzle with olive oil and season with salt. Roast for 20 minutes or until crispy, then sprinkle with cheese and return to oven until cheese melts.
Cook Steak Bites: While potatoes bake, season steak bites with salt and pepper. Heat olive oil in a skillet over medium-high heat. Add steak pieces, cooking 2-3 minutes per side until browned. Remove from skillet.
Make Garlic Butter: In the same skillet, add butter and garlic, cooking until fragrant. Return steak bites to skillet and toss to coat in garlic butter.
Serve: Plate steak bites with cheesy smashed potatoes, garnished with fresh parsley and chives.
Notes:
For extra flavor, add a sprinkle of Parmesan on the potatoes before serving.
