Avocado and Spinach Egg Salad

Ingredients:
– 2 ripe avocados, diced
– 4 hard-boiled eggs, chopped
– 4 cups fresh spinach, chopped
– 1/2 red onion, finely chopped
– 1 cucumber, diced
– Juice of 1 lemon
– 1 tablespoon sugar free syrup (optional)
– 2 tablespoons extra virgin olive oil
– Salt and pepper to taste
– Fresh parsley or cilantro for garnish (optional)

Instructions:
1. Prepare the Ingredients:
– Dice the avocados and place them in a large mixing bowl.
– Chop the hard-boiled eggs and add them to the bowl.
– Wash and chop the spinach.
– Finely chop the red onion.
– Dice the cucumber.

2. Combine the Salad:
In the mixing bowl, combine the diced avocados, chopped eggs, spinach, onion, and cucumber.

3. Make the Dressing:
In a small bowl, whisk together lemon juice, olive oil, syrup (if using), salt, and pepper.

4. Dress the Salad:
Pour the dressing over the salad and gently toss to coat the ingredients evenly.

5. Garnish and Serve:
Garnish with parsley or cilantro if desired.
Serve immediately with whole grain bread or crackers for a complete meal.

Optional Enhancements:
Add sliced radishes or bell peppers for crunch. Sprinkle crumbled feta or toasted nuts for extra flavor.
