Beef Braciole

Ingredients:

– 1 pound thinly sliced beef (like flank steak)
– 1 cup fresh spinach, chopped
– 1/2 cup grated Parmesan cheese
– 1/4 cup breadcrumbs
– 2 cloves garlic, minced
– 1 tablespoon fresh parsley, chopped
– 1 teaspoon Italian seasoning
– Salt and pepper to taste
– 1 cup marinara sauce
– Olive oil for cooking
– Toothpicks or kitchen twine

Instructions:

1. In a mixing bowl, combine the chopped spinach, Parmesan cheese, breadcrumbs, minced garlic, parsley, Italian seasoning, salt, and pepper. Mix well to create the filling.
2. Lay the thin beef slices on a clean surface and season with a little salt and pepper.
3. Place a generous spoonful of the filling on one end of each beef slice.
4. Roll the beef tightly around the filling and secure it with toothpicks or kitchen twine.
5. In a large skillet, heat a bit of olive oil over medium-high heat. Once hot, add the beef rolls and sear them on all sides until browned, about 5 minutes.
6. Pour the marinara sauce over the beef rolls, cover the skillet, and reduce the heat to low. Let them simmer for about 30 minutes, allowing the flavors to meld.
7. Carefully remove the toothpicks or twine before serving. Slice the rolls to reveal the delicious filling inside.
8. Serve the braciole with extra marinara sauce on top and enjoy!
Notes:
Feel free to customize the filling with your favorite herbs or add some crushed red pepper for a little heat.
This dish pairs wonderfully with pasta or a fresh salad.
