Country Ranch Green Beans and Potatoes with Bacon
Ingredients:
1 lb fresh green beans, trimmed
1 lb baby potatoes, halved (red or Yukon gold work great)
6 slices bacon, chopped
1 packet (1 oz) ranch seasoning mix
2 tablespoons olive oil
Salt and pepper, to taste
1 tablespoon garlic, minced
1 tablespoon fresh parsley, chopped (for garnish)
Instructions:
Step 1: Cook the Bacon
Cook Bacon:
In a large skillet over medium heat, cook the chopped bacon until crispy, about 6-8 minutes. Remove the bacon and place it on a paper towel-lined plate to drain, leaving the bacon drippings in the skillet.
Step 2: Prepare the Potatoes
Boil the Potatoes:
Bring a pot of salted water to a boil and add the halved potatoes. Cook for about 10-12 minutes or until they are fork-tender. Drain and set aside.
Step 3: Sauté the Green Beans
Sauté Green Beans:
In the skillet with the bacon drippings, add the trimmed green beans. Cook for about 5-7 minutes, stirring occasionally, until they are bright green and slightly tender.
Add Garlic:
Stir in the minced garlic and cook for an additional 1-2 minutes, until fragrant.
Step 4: Combine Everything
Add Potatoes:
Add the boiled potatoes to the skillet with the green beans. Stir to combine everything.
Season:
Sprinkle the ranch seasoning mix over the potatoes and green beans. Drizzle with olive oil and toss to coat everything evenly. Cook for another 3-4 minutes to let the flavors meld together.
Add Bacon:
Stir the crispy bacon back into the skillet and mix well.
Step 5: Garnish and Serve
Garnish:
Sprinkle the dish with fresh parsley for a pop of color.
Serve:
Serve your Country Ranch Green Beans and Potatoes with Bacon warm as a delicious side dish!
This dish is full of flavor with tender potatoes, crisp green beans, and the smoky goodness of bacon, all enhanced by the zesty ranch seasoning. Enjoy!
