This Slow Cooker Pineapple Pork Loin is a Sweet and Savory Dream Come True

Ingredients:

Pork Loin: 2-3 lbs, trimmed of excess fat
Vegetable Oil: 2 tablespoons
Salt and Pepper: to taste
Garlic: 8 cloves, minced
Soy Sauce: 1/4 cup
Brown Sugar: 1/2 cup
Pineapple Chunks (with juice): 1 can (23.5 ounces)
Instructions:
Prepare the Pork: Start by trimming any excess fat from the pork loin, then season it generously with salt and pepper.
Brown the Pork: In a large skillet, heat the vegetable oil over medium-high heat. Once hot, sear the pork loin on all sides until it’s beautifully golden brown, about 2-4 minutes per side.
Slow Cook the Pork: Place the browned pork loin into your slow cooker. Spread the minced garlic over the top, then pour in the soy sauce and add the pineapple chunks along with their juice. Finally, sprinkle the brown sugar evenly on top.
Cook: Cover the slow cooker and set it to cook on low. For sliceable pork loin, cook for 4-6 hours. For a tender, shredded texture, let it cook on low for 8-10 hours, occasionally basting the pork with the cooking juices. Once it’s tender, shred the pork and return it to the slow cooker for an additional hour to absorb more flavor.
