Garlic Parmesan Chicken Meatloaves

Ingredients:

Meatloaves:

2 lbs ground chicken
½ yellow onion, diced (about ½ cup)
8-10 garlic cloves, pressed
¾ cup bread crumbs (or 2 slices of dense bread, crumbled)
1 egg
3 Tbsp fresh minced parsley
3 oz fresh grated Parmesan cheese
Salt, to taste
Fresh cracked black pepper, to taste
Optional: extra fresh grated Parmesan cheese to top
Instructions
Preheat Oven:

Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease it.
Prepare the Meatloaf Mixture:

In a large mixing bowl, combine the ground chicken, diced onion, pressed garlic, bread crumbs, egg, minced parsley, and grated Parmesan cheese.
Season with salt and freshly cracked black pepper to taste.
Mix all the ingredients until well combined.
Form the Meatloaves:

Divide the mixture into equal portions and shape them into small individual meatloaves.
Place the meatloaves on the prepared baking sheet.
Bake:

Bake in the preheated oven for 25-30 minutes, or until the meatloaves are cooked through and the internal temperature reaches 165°F (74°C).
Optional Topping:

If desired, sprinkle extra fresh grated Parmesan cheese on top of each meatloaf during the last 5 minutes of baking.
Serve:

Remove the meatloaves from the oven and let them rest for a few minutes before serving.
Serve warm, garnished with additional fresh parsley if desired.
