🍍 Pineapple Cowboy Candy 🌶️

Ingredients:

4 cups fresh pineapple, diced
1 cup granulated sugar
1/2 cup apple cider vinegar
1/4 cup water
2 tablespoons honey
1 teaspoon salt
1 teaspoon red pepper flakes
2-3 jalapeño peppers, thinly sliced
1/2 teaspoon ground turmeric
1/2 teaspoon ground ginger
1/2 teaspoon ground mustard
Instructions:

1️⃣ Prepare the Pineapple: In a large bowl, combine the diced pineapple and thinly sliced jalapeños. Set aside.

2️⃣ Make the Syrup: In a medium saucepan, combine granulated sugar, apple cider vinegar, water, honey, salt, red pepper flakes, turmeric, ginger, and mustard. Bring the mixture to a boil over medium-high heat, stirring frequently to dissolve the sugar.

3️⃣ Simmer: Reduce the heat to medium-low and simmer the syrup for about 5 minutes until slightly thickened.

4️⃣ Add Pineapple and Jalapeños: Carefully add the pineapple and jalapeño slices to the simmering syrup. Stir to coat the fruit evenly. Simmer for an additional 10-15 minutes until the pineapple becomes translucent and the jalapeños are tender.

5️⃣ Jar the Candy: Using a slotted spoon, transfer the pineapple and jalapeños to sterilized jars. Continue to simmer the syrup until it thickens slightly, about 5 more minutes.

6️⃣ Fill the Jars: Carefully pour the hot syrup over the pineapple and jalapeños in the jars, leaving about 1/2 inch of headspace. Wipe the rims of the jars clean, then seal with lids and rings.

7️⃣ Cool and Store: Let the jars cool to room temperature. Store in the refrigerator for up to a month or process in a water bath canner for longer shelf life.

8️⃣ Enjoy: Serve the Pineapple Cowboy Candy as a topping for burgers, hot dogs, tacos, or as a side dish. Enjoy the perfect blend of sweet and spicy flavors! 🍽️
