Crispy Parmesan Potatoes
Ingredients:
2 lbs small red or yellow potatoes, quartered
1/4 cup olive oil
1/2 cup grated Parmesan cheese
2 tablespoons minced garlic
1 teaspoon salt
1/2 teaspoon pepper
2 teaspoons Italian seasoning
Fresh parsley, chopped for garnish
Directions:
Preheat oven to 400°F (200°C).
In a large bowl, toss the potatoes with olive oil, Parmesan cheese, garlic, salt, pepper, and Italian seasoning until well coated.
Spread the potatoes in a single layer on a baking sheet.
Roast in the preheated oven for 25-30 minutes, or until golden brown and crispy, turning once halfway through cooking.
Garnish with fresh parsley before serving.
