Chicken cassoulet is a delicious and comforting French dish that typically includes chicken, white beans, vegetables, and often sausage or bacon. Here’s a basic recipe for making chicken cassoulet:

Ingredients:
– 4 chicken thighs
– 4 chicken drumsticks
– 1 onion, chopped
– 3 cloves of garlic, minced
– 2 carrots, chopped
– 2 celery stalks, chopped
– 1 can (15 oz) white beans, drained and rinsed
– 1 can (14 oz) diced tomatoes
– 1 cup chicken broth
– 2 teaspoons dried thyme
– 1 teaspoon dried rosemary
– Salt and pepper to taste
– 2 tablespoons olive oil
– 1/2 cup breadcrumbs
– Fresh parsley, chopped (for garnish)

Instructions:
1. Preheat the oven to 350°F (180°C).
2. Season the chicken thighs and drumsticks with salt and pepper.
3. Heat olive oil in a large oven-safe pot or Dutch oven over medium-high heat.
4. Brown the chicken pieces on all sides, then remove them from the pot and set aside.
5. In the same pot, add the onion, garlic, carrots, and celery. Cook until the vegetables are softened, about 5 minutes.
6. Add the white beans, diced tomatoes, chicken broth, thyme, and rosemary to the pot. Season with salt and pepper.
7. Nestle the chicken pieces back into the pot, making sure they are submerged in the liquid.
8. Cover the pot and transfer it to the preheated oven. Bake for about 1 hour, until the chicken is cooked through and tender.
9. In a small bowl, mix the breadcrumbs with a little olive oil.
10. Sprinkle the breadcrumb mixture over the cassoulet and return it to the oven, uncovered, for an additional 15-20 minutes, or until the breadcrumbs are golden brown.
11. Garnish with chopped parsley before serving.
