Instructions:
οΈβ£ Place pineapple rings in a medium bowl. Cover with dark rum and coconut rum. Let soak for at least 1 hour. Drain and reserve rum. Pat pineapple dry.
οΈβ£ Place flour and sweetened coconut in two separate shallow bowls. In a third shallow bowl, whisk eggs and coconut milk together.
οΈβ£ Working one at a time, dip each pineapple ring in flour, then in the egg mixture, and finally coat generously with sweetened coconut, pressing gently to adhere.
οΈβ£ In a deep, heavy-bottomed pot, heat vegetable oil over medium-high heat to about 350Β°F (175Β°C). Fry pineapple rings in batches until golden brown, about 1 minute per side. Use a slotted spoon to transfer fried pineapple to a paper towel-lined plate to drain excess oil.
οΈβ£ In a medium bowl, beat cream cheese and powdered sugar together until smooth. Gradually add 2 tablespoons of reserved rum (adjust amount to taste and consistency). Mix until well combined and creamy.
οΈβ£ Serve the fried pineapple rings warm, accompanied by the rum-infused cream cheese sauce for dipping.
