Banana Cake

Ingredients:

2 cups all-purpose flour
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 cup unsalted butter, softened
1 cup granulated sugar
2 large eggs
1 teaspoon vanilla extract
1/2 cup sour cream or Greek yogurt
1 1/2 cups mashed ripe bananas (about 3 large bananas)
For the Cream Cheese Frosting:

8 ounces cream cheese, softened
1/4 cup unsalted butter, softened
2 cups powdered sugar
1 teaspoon vanilla extract
1-2 tablespoons milk (optional, for desired consistency)
Steps:

Preheat your oven to 350°F (175°C). Grease and flour a 9×13-inch baking pan.

In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.

In a large mixing bowl, beat the softened butter and granulated sugar together until light and fluffy.

Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.

Mix in the sour cream or Greek yogurt until well combined.

Add the mashed bananas to the mixture and stir until evenly distributed.

Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix.

Pour the batter into the prepared baking pan and spread it out evenly.

Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center of the cake comes out clean.

Remove the cake from the oven and let it cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.

For the Cream Cheese Frosting:

In a large mixing bowl, beat the softened cream cheese and butter together until smooth and creamy.

Gradually add the powdered sugar, 1 cup at a time, beating until smooth and well combined.

Stir in the vanilla extract. If the frosting is too thick, add milk, 1 tablespoon at a time, until you reach the desired consistency.

Once the cake is completely cooled, spread the cream cheese frosting evenly over the top of the cake.

Slice and serve this moist and fluffy banana cake, and enjoy every delicious bite!

Tip: For an extra special touch, garnish the cake with chopped nuts, banana slices, or a sprinkle of cinnamon.
