Jack’d Up Smoked Meatloaf
Ingredients:
2 lbs ground beef
1 onion, finely chopped
2 cloves garlic, minced
1/2 cup breadcrumbs
2 large eggs
1/4 cup ketchup
2 tablespoons Worcestershire sauce
1 tablespoon Dijon mustard
1 tablespoon brown sugar
1 teaspoon smoked paprika
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 cup Jack Daniel’s whiskey
1/4 cup barbecue sauce
Cooking spray
Directions:
Preheat your smoker to 225°F (110°C) according to manufacturer’s instructions.
In a large mixing bowl, combine ground beef, finely chopped onion, minced garlic, breadcrumbs, eggs, ketchup, Worcestershire sauce, Dijon mustard, brown sugar, smoked paprika, salt, and black pepper. Mix until well combined.
Pour Jack Daniel’s whiskey over the meat mixture and gently fold it in until evenly distributed.
Shape the meat mixture into a loaf shape and place it on a sheet of aluminum foil.
In a small bowl, mix together barbecue sauce and a splash of Jack Daniel’s whiskey. Brush this mixture over the top and sides of the meatloaf.
Place the meatloaf on the smoker grate and smoke for 2-3 hours, or until the internal temperature reaches 160°F (71°C).
Once cooked, remove the meatloaf from the smoker and let it rest for 10-15 minutes before slicing.
