Haitian Epis 🌶️🌿
Ingredients:
1 large onion, roughly chopped
1 green bell pepper, seeded and roughly chopped
1 red bell pepper, seeded and roughly chopped
6 green onions, roughly chopped
4 cloves garlic
1 bunch fresh parsley, roughly chopped
1 bunch fresh cilantro (coriander), roughly chopped
Juice of 1 lime
2 tablespoons olive oil
1 tablespoon apple cider vinegar
1-2 Scotch bonnet peppers, seeded (adjust to taste)
1 teaspoon dried thyme
1 teaspoon ground cloves
Salt and black pepper to taste
Directions:
1️⃣ Blend the Ingredients: In a food processor or blender, combine the onion, green and red bell peppers, green onions, garlic, parsley, cilantro, lime juice, olive oil, and apple cider vinegar. Add the Scotch bonnet peppers (be cautious with the amount, as they are very spicy), dried thyme, ground cloves, salt, and black pepper.
2️⃣ Process to a Paste: Pulse the ingredients until they form a smooth paste, scraping down the sides as necessary. If the mixture is too thick, you can add a little more olive oil or a splash of water to help it blend smoothly.
3️⃣ Taste and Adjust: Taste the Epis and adjust the seasoning as needed. Remember, the Scotch bonnet peppers are very spicy, so add them gradually to reach your desired level of heat.
4️⃣ Store: Transfer the Epis to a jar or an airtight container. It can be stored in the refrigerator for up to a week or frozen in small portions for longer storage.
