Salisbury Steak with Mashed Potatoes

– **For the Salisbury Steak:**
– 1 pound ground beef
– 1/3 cup bread crumbs
– 1/4 cup finely chopped onion
– 1 egg
– 2 tablespoons ketchup
– 1 tablespoon Worcestershire sauce
– 1/2 teaspoon garlic powder
– Salt and pepper to taste
– 1 tablespoon olive oil
– 1 cup beef broth
– 1 tablespoon cornstarch mixed with 2 tablespoons water
– 1/2 cup sliced mushrooms (optional)
– **For the Mashed Potatoes:**
– 2 pounds potatoes, peeled and quartered
– 1/2 cup milk
– 1/4 cup butter
– Salt and pepper to taste

1. **For the Salisbury Steak:**
1. In a bowl, combine ground beef, bread crumbs, onion, egg, ketchup, Worcestershire sauce, garlic powder, salt, and pepper. Mix well.
2. Shape into 4 oval patties.
3. Heat olive oil in a skillet over medium heat. Add patties and cook until browned on both sides. Remove and set aside.
4. In the same skillet, add beef broth and bring to a simmer. If using, add sliced mushrooms.
5. Return patties to the skillet. Cover and simmer for 10-15 minutes.
6. Remove patties. Stir cornstarch mixture into the skillet to thicken the gravy. Return patties to the skillet and coat with the gravy.
2. **For the Mashed Potatoes:**
1. Boil potatoes in salted water until tender, about 20 minutes.
2. Drain and return potatoes to the pot.
3. Add milk, butter, salt, and pepper. Mash until smooth.
