Decadent Cheese Shrimp Penne Pasta and Spinach
Ingredients
8 ounces of penne pasta
1 pound of shrimp, peeled and deveined
2 tablespoons of olive oil
4 cloves of garlic, minced
1 cup of heavy cream
1 cup of grated Parmesan cheese
2 cups of fresh spinach
Salt and pepper to taste
Instructions
Start by bringing a large pot of salted water to a boil. Add the penne pasta and cook according to the package instructions until al dente. Drain and set aside.
While the pasta is cooking, heat the olive oil in a large skillet over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
Add the shrimp to the skillet and cook for 2-3 minutes on each side until they turn pink and opaque. Make sure not to overcook them, as they can become rubbery.
Once the shrimp are cooked, remove them from the skillet and set aside. In the same skillet, add the heavy cream and bring it to a simmer.
Gradually whisk in the grated Parmesan cheese until it melts and the sauce becomes smooth and creamy. Season with salt and pepper to taste.
Add the cooked penne pasta to the skillet with the creamy sauce. Toss to coat the pasta evenly.
Stir in the fresh spinach and cook for an additional 2-3 minutes until it wilts down.
Finally, add the cooked shrimp back to the skillet and gently toss everything together until well combined.
Remove from heat and let the flavors meld together for a couple of minutes before serving.
