Ingredients:
500g boneless, skinless chicken breasts, thinly sliced
1 red bell pepper, thinly sliced
1 yellow bell pepper, thinly sliced
1 green bell pepper, thinly sliced
1 large onion, thinly sliced
3 tablespoons olive oil, divided
2 cloves garlic, minced
1 tablespoon chili powder
1 teaspoon smoked paprika
1 teaspoon ground cumin
1/2 teaspoon dried oregano
1/4 teaspoon cayenne pepper (optional for heat)
Salt and pepper, to taste
Juice of 1 lime
Fresh cilantro, chopped (for garnish)
Warm flour or corn tortillas, for serving
Directions:
In a medium bowl, combine chili powder, smoked paprika, cumin, oregano, cayenne pepper, salt, and pepper. Add the sliced chicken and toss to coat evenly with the spice mix. Set aside.
Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Add the sliced onions and peppers, sautéing for 5-7 minutes until softened and slightly caramelized. Remove from skillet and set aside.
In the same skillet, add the remaining tablespoon of olive oil. Add the minced garlic and sauté for about 30 seconds until fragrant.
Add the seasoned chicken to the skillet and cook for 6-8 minutes, stirring occasionally, until the chicken is cooked through and browned on the edges.
Return the sautéed peppers and onions to the skillet. Toss everything together and cook for another 2 minutes to let the flavors meld.
Remove from heat and squeeze fresh lime juice over the fajita mixture. Garnish with chopped cilantro.
Serve immediately with warm tortillas and your favorite fajita toppings like sour cream, guacamole, or salsa.
