Shrimp Tomato Spinach Pasta in Garlic Butter Sauce

Ingredients

8 oz pasta (your favorite kind)
1 lb shrimp, peeled and deveined
2 cups cherry tomatoes, halved
2 cups fresh spinach
4 tbsp butter
4 cloves garlic, minced
Salt and pepper to taste
Parmesan cheese for serving (optional)
Red pepper flakes (optional)

Directions

1. Bring a big pot of salted water to a boil, add your pasta, and cook according to the package directions. Drain and set aside when it’s done.
2. Grab a large skillet and melt the butter over medium heat. Toss in the minced garlic and let it sizzle for about a minute until fragrant.
3. Add the shrimp, sprinkle in some salt, pepper, and a pinch of red pepper flakes if you like a little heat. Cook the shrimp until they’re pink and just cooked through—about 3 to 4 minutes.
4. Toss in the cherry tomatoes and let them cook for another 2 minutes, until they’re just starting to soften.
5. Pile in the spinach and stir gently until it wilts down.
6. Add the drained pasta right into the skillet and toss everything together so the noodles soak up all that garlic butter goodness.
7. Scoop into bowls and, if you’d like, shower with freshly grated Parmesan. Serve right away and enjoy every bite!
