Ingredients:
4 Italian sausages (mild or hot)
2 tbsp olive oil
1 red bell pepper, sliced
1 yellow bell pepper, sliced
1 green bell pepper, sliced
1 large onion, sliced
3 cloves garlic, minced
1 can (14 oz) diced tomatoes (optional for saucier version)
1 tsp dried oregano
1/2 tsp crushed red pepper flakes (optional)
Salt and black pepper, to taste
Fresh parsley, chopped (for garnish)
Instructions:
Heat 1 tbsp olive oil in a large skillet over medium heat. Add sausages and cook until browned on all sides, about 6–8 minutes. Remove and set aside.
In the same skillet, add the remaining olive oil, then toss in sliced peppers and onion. Cook until softened, about 5–6 minutes.
Stir in garlic, oregano, red pepper flakes, salt, and pepper. Cook 1 minute until fragrant.
Slice sausages into thick pieces and return to skillet. Add diced tomatoes if using, then simmer for 8–10 minutes until sausages are cooked through and flavors meld.
Garnish with fresh parsley and serve hot over rice, pasta, or with warm crusty bread.
Tip: For extra flavor, deglaze the pan with a splash of white wine before adding tomatoes.
