Roast Lamb with Onion & Mint Sauce

Description:
A Sunday roast essential — tender lamb served with onion-mint sauce and traditional British sides.

Ingredients:
• 1.2kg lamb leg or shoulder
• 2 onions, sliced
• 1 tbsp chopped mint
• 2 tbsp malt vinegar
• 1 tsp sugar
• Salt, pepper, olive oil

Instructions:
1. Rub lamb with oil, salt, pepper. Roast at 180°C for 1.5–2 hrs.
2. Simmer onions with vinegar, mint, and sugar for sauce.
3. Rest lamb, slice, serve with onion-mint sauce.
