One-Pot Macaroni Cheeseburger Soup

Ingredients

1 lb ground beef
1 onion, chopped
2 cloves garlic, minced
4 cups beef broth
2 cups elbow macaroni
1 cup cheddar cheese, shredded
1 cup milk
1 can diced tomatoes
Salt and pepper to taste
Optional toppings: pickles, additional cheese, green onions

Directions

1. Grab your largest soup pot and brown the ground beef over medium heat. Once it’s cooked through, drain off any extra fat so your soup isn’t greasy.
2. Toss in the chopped onion and minced garlic. Sauté everything together until the onion softens and starts smelling amazing.
3. Stir in the beef broth and the can of diced tomatoes—juice and all. Bring everything to a nice boil.
4. Add the macaroni, stirring well so it doesn’t stick. Let it cook according to the pasta package directions, until the noodles are tender.
5. Turn the heat down low, then stir in the milk and shredded cheddar cheese. Keep stirring gently until the cheese melts and the broth gets creamy.
6. Add a pinch of salt and pepper, giving it a taste to make sure it’s just right.
7. Ladle into bowls while it’s piping hot, and let everyone top their soup with whatever they like—crunchy pickles, a sprinkle of cheese, or some green onions. Enjoy this cozy bowl of comfort!
