Lamb Hotpot

Description:
A Lancashire favorite — layered lamb, root vegetables, and sliced potatoes baked slowly until tender and golden.

Ingredients:
• 500g lamb shoulder, diced
• 1 onion, sliced
• 2 carrots, sliced
• 4 potatoes, thinly sliced
• 1 tbsp flour
• 1.5 cups lamb stock
• Thyme, salt, pepper

Instructions:
1. Brown lamb, add onions, carrots, and flour.
2. Layer in baking dish with potatoes.
3. Pour over stock, top with potato slices.
4. Bake at 180°C for 1.5 hours.
