Jerk Lemon Pepper Salmon

Ingredients

1 or 2 pieces of salmon (about 1 1/2 lbs)
2 tablespoons butter
1 tablespoon peanut or canola oil
Jerk seasoning (to taste)
Lemon (for garnish)
Salt and pepper (to taste)

Directions

1. Go ahead and preheat your oven to 375°F (190°C) so it’s ready to go.
2. Take your salmon and pat it dry with some paper towels. This helps it cook up beautifully. Place the salmon skin-side down on a baking sheet.
3. In a small bowl, mix together jerk seasoning, salt, and pepper to your taste. This is where you make the salmon your own.
4. Now, rub that flavorful jerk mixture evenly all over the top of your salmon. Get every nook and cranny.
5. Heat the butter and oil together in a skillet over medium heat. Once it’s hot, gently lay the salmon in, skin side down first. Sear for 2 to 3 minutes per side until you’ve got a lovely golden crust.
6. Move the seared salmon to the preheated oven and bake for about 10 to 12 minutes. The salmon is ready when it flakes easily with a fork.
7. Serve your gorgeous salmon with fresh lemon wedges on the side, and enjoy every bite!
