Description:
Juicy lamb chops coated in herb crumbs, pan-seared and served with minted green peas.
Ingredients:
• 4 lamb chops
• 2 tbsp breadcrumbs
• 1 tbsp fresh rosemary & thyme
• 1 tbsp mustard
• 1 cup peas
• 1 tbsp mint jelly or chopped mint
Instructions:
1. Brush chops with mustard, coat in herbs & crumbs.
2. Sear in hot pan 3 mins per side.
3. Boil peas and toss with mint jelly.
