Ingredients:
For the Fritters:
2 eggs, room temperature
⅔ cup milk, room temperature
1 tablespoon unsalted butter, melted
1 teaspoon vanilla extract
1 ½ cups all-purpose flour
2 tablespoons brown sugar
2 teaspoons baking powder
½ teaspoon ground cinnamon
¼ teaspoon salt
3 ripe bananas, chopped
Vegetable oil for frying
For the Glaze:
2 cups powdered sugar
⅓ cup milk
½ teaspoon vanilla extract
⅛ teaspoon ground cinnamon
Directions:
Whisk together eggs, milk, melted butter, and vanilla extract in a medium bowl until smooth.
In a large bowl, mix flour, brown sugar, baking powder, cinnamon, and salt until well combined.
Slowly pour the wet ingredients into the dry, stirring until just combined. Avoid overmixing.
Fold in the chopped bananas.
Heat vegetable oil in a deep skillet or frying pan (about 1-2 inches deep) over medium heat.
Drop spoonfuls of the batter into the hot oil and fry in batches for 2-3 minutes per side, until golden brown. Remove and drain on paper towels.
For the glaze, whisk powdered sugar, milk, vanilla, and cinnamon in a small bowl until smooth.
Drizzle the glaze over the warm fritters and allow it to set before serving.
