Pita Pocket with Sweet Potato Fries

Ingredients:

Whole wheat pita

Guacamole (avocado, lime, salt)

Roasted mushrooms (or another veggie/meat filling)

Sweet potatoes

Olive oil, salt, garlic powder

Instructions:

Sweet Potato Fries:

1. Cut sweet potatoes into thin fry shapes.

2. Toss in olive oil, salt, garlic powder.

3. Bake at 425°F (220°C) for 25–30 minutes, flipping halfway.

Pita Pocket:

1. Make guacamole: Mash avocados with a bit of lime juice and salt.

2. Roast mushrooms or your preferred filling with olive oil, salt, and herbs at 400°F (200°C) for ~20 minutes.

3. Assemble:

Cut pita in half

Stuff with guacamole and roasted filling
