Garlic Shrimp Pasta

Ingredients

1 lb medium shrimp, deveined and tails removed
1 lb spaghetti noodles
6-8 garlic cloves, minced
Olive oil
Red pepper flakes
Salt
Black pepper
Fresh parsley, chopped
Lemon juice

Directions

1. Bring a large pot of salted water to a boil and cook the spaghetti noodles until just al dente, according to the package instructions.
2. While the pasta cooks, heat a generous swirl of olive oil in a large skillet over medium heat.
3. Add the minced garlic and a pinch of red pepper flakes to the skillet. Sauté for about a minute, letting the garlic turn fragrant but not brown.
4. Add the shrimp to the skillet. Season with salt and black pepper, and cook for 2-3 minutes on each side, until the shrimp are pink and just opaque.
5. Drain your spaghetti and add it directly into the skillet with the shrimp and garlic.
6. Toss everything together, making sure the noodles get coated in all that garlicky goodness. Taste and add more salt or pepper if you like.
7. Sprinkle plenty of chopped parsley over the top and finish with a squeeze of fresh lemon juice before serving. Enjoy while it’s hot!
