Ingredients (Serves 2):
2 salmon fillets, thick and center-cut
8 large shrimp, peeled & deveined
1/2 cup shrimp, chopped (for stuffing)
2 tbsp cream cheese
1 tbsp mayonnaise
1/2 tsp garlic, minced
1 tbsp fresh parsley, chopped
1 tsp lemon juice
2 tbsp butter
Salt and pepper to taste
Instructions:
Prepare the Filling: In a bowl, mix the chopped shrimp, cream cheese, mayonnaise, minced garlic, parsley, and lemon juice. Season with salt and pepper.
Stuff the Salmon: Cut a slit in each salmon fillet to create a pocket. Stuff the shrimp mixture generously inside each pocket.
Cook the Salmon: In a skillet, heat butter over medium heat. Sear the salmon fillets for 4-5 minutes on each side until golden and cooked through.
Cook the Whole Shrimp: In the same skillet, add the remaining whole shrimp and cook for 1-2 minutes until pink.
Assemble: Place the cooked salmon fillets on a plate, top with the seared shrimp, and spoon any extra sauce from the pan over the top.
