Braised Lamb Shanks with Saffron Rice

Ingredients for Lamb Shanks:
4 lamb shanks 🦴
1 large onion, chopped 🧅
4 cloves garlic, minced 🧄
2 tbsp tomato paste 🍅
1 cup red wine 🍷
3 cups beef or chicken stock 🍖
2 sprigs rosemary 🌿
1 tsp thyme 🌿
1/2 tsp smoked paprika 🌶️
Salt and pepper to taste 🧂
Ingredients for Saffron Rice:
2 cups rice 🍚
3 cups water or stock 💧
A pinch of saffron threads ✨
Salt to taste 🧂
Steps to Prepare:
1️⃣ Prep the Lamb Shanks:
Pat the lamb shanks dry and season generously with salt, pepper, and smoked paprika.

2️⃣ Sear the Shanks:
Heat olive oil in a large pot over medium-high heat. Sear the lamb shanks on all sides until golden brown. Remove and set aside.

3️⃣ Make the Sauce:
In the same pot, sauté the onion and garlic until soft. Add tomato paste and cook for 1-2 minutes. Pour in the red wine, scraping up any browned bits from the bottom. Stir in the stock, rosemary, and thyme.

4️⃣ Braise the Lamb:
Return the lamb shanks to the pot. Cover and cook on low heat for 2-3 hours, turning occasionally, until the meat is tender and falling off the bone.

5️⃣ Prepare the Saffron Rice:
In a saucepan, bring water or stock to a boil. Add saffron and salt, then stir in the rice. Reduce heat, cover, and cook until the rice is fluffy and infused with saffron’s rich aroma.

6️⃣ Serve and Garnish:
Place the saffron rice on a plate, top with the braised lamb shanks, and drizzle with the sauce. Garnish with freshly chopped parsley for a final touch.
