Pot Roast with Tomato Sauce

Ingredients:

3 lbs beef chuck roast 🥩
2 tbsp olive oil 🛢
1 large onion, diced 🧅
3 garlic cloves, minced 🧄
1 can (28 oz) crushed tomatoes 🍅
1 cup beef broth 🥣
1/4 cup red wine (optional) 🍷
2 carrots, sliced 🥕
2 celery stalks, chopped 🥬
2 tsp Italian seasoning 🌿
1 bay leaf 🍃
