Italian Sausage with Peppers and Onions

Ingredients:

4 Italian sausages (mild or spicy, as preferred)
2 tablespoons olive oil
1 red bell pepper, sliced
1 green bell pepper, sliced
1 yellow bell pepper, sliced
1 large onion, sliced
2 garlic cloves, minced
1 teaspoon dried oregano
1 teaspoon dried basil
1/4 teaspoon crushed red pepper flakes (optional)
1/4 cup chicken broth or water
Salt and black pepper to taste
Fresh parsley, chopped (for garnish)
Italian rolls or pasta (optional, for serving)
Directions:

Heat olive oil in a large skillet over medium heat. Add the Italian sausages and cook until browned on all sides, about 8-10 minutes. Remove sausages from the skillet and set aside.
In the same skillet, add the bell peppers and onions. Sauté for 5-7 minutes until softened.
Add the garlic, oregano, basil, and crushed red pepper flakes (if using) to the skillet. Stir and cook for another minute until fragrant.
Pour in the chicken broth or water to deglaze the skillet, scraping up any browned bits. Reduce the heat to low.
Return the sausages to the skillet, cover, and simmer for 10-12 minutes until the sausages are fully cooked and the flavors are well blended.
Adjust seasoning with salt and black pepper to taste. Garnish with fresh parsley.
Serve warm with Italian rolls for sandwiches or over pasta for a hearty meal.
