Garlic Butter Steak Bites and Mash

Ingredients:
For the Steak Bites:
1 pound (450 g) sirloin or ribeye steak, cut into bite-sized cubes
2 tablespoons olive oil
4 tablespoons unsalted butter, divided
4 cloves garlic, minced
1 teaspoon fresh rosemary, chopped (or 1/2 teaspoon dried rosemary)
1 teaspoon fresh thyme, chopped (or 1/2 teaspoon dried thyme)
Salt and pepper, to taste
For the Mashed Potatoes:
2 pounds (900 g) russet or Yukon Gold potatoes, peeled and cubed
4 tablespoons unsalted butter
1/2 cup milk or heavy cream (adjust for desired creaminess)
Salt and pepper, to taste
Optional: chopped chives or parsley for garnish
Instructions:
1. Prepare the Mashed Potatoes:
Boil Potatoes: In a large pot, add the peeled and cubed potatoes and cover with cold water. Add a pinch of salt. Bring to a boil and cook for about 15-20 minutes, or until the potatoes are fork-tender.
Drain and Mash: Drain the potatoes and return them to the pot. Add the butter and milk or cream. Mash until smooth and creamy. Season with salt and pepper to taste. Keep warm while you prepare the steak bites.
2. Cook the Steak Bites:
Heat the Skillet: In a large skillet, heat the olive oil over medium-high heat.
Sear the Steak: Add the steak cubes to the skillet in a single layer (you may need to do this in batches). Season with salt and pepper. Sear for 2-3 minutes on each side, or until they reach your desired level of doneness. Remove the steak bites from the skillet and set aside.
Add Garlic and Herbs: In the same skillet, lower the heat to medium and add 2 tablespoons of butter. Once melted, add the minced garlic, chopped rosemary, and thyme. Sauté for about 30 seconds until fragrant.
Combine: Return the steak bites to the skillet and toss to coat in the garlic butter sauce. Cook for an additional minute to heat through.
3. Serve:
Plate the Dish: Serve the garlic butter steak bites over a generous scoop of mashed potatoes. Drizzle with the garlic butter sauce from the skillet.
Garnish: Optionally, sprinkle with chopped chives or parsley for added color and flavor.
Tips:
Steak Doneness: Use a meat thermometer to check for doneness: 130°F (54°C) for medium-rare, 140°F (60°C) for medium, and 150°F (66°C) for medium-well.
Variations: Add vegetables like steamed broccoli or sautéed green beans on the side for a complete meal.
Leftovers: Store any leftovers in an airtight container in the refrigerator for up to 3 days. Reheat gently in the microwave or on the stovetop.
