Chocolate Lava Brownie Cookies

These Chocolate Lava Brownie Cookies combine the rich, fudgy texture of brownies with a molten chocolate center that oozes with every bite. Perfect for chocoholics and anyone who loves indulgent, gooey desserts, these cookies are sure to satisfy!

Ingredients:
1 cup semisweet chocolate chips
1/4 cup unsalted butter
2/3 cup granulated sugar
2 large eggs
1 teaspoon vanilla extract

1/4 teaspoon salt
1/2 cup cocoa powder
12-15 small chocolate truffles (or pieces of dark chocolate)
Instructions:
1. Melt the Chocolate and Butter:
In a microwave-safe bowl, melt the chocolate chips and butter in 20-30 second intervals, stirring in between until smooth. Set aside to cool slightly.

2. Mix the Wet Ingredients:
In a large bowl, whisk together the sugar, eggs, and vanilla extract until well combined. Slowly add the melted chocolate mixture and whisk until smooth.

3. Combine the Dry Ingredients:
In a separate bowl, sift together the flour, baking powder, salt, and cocoa powder. Gradually fold the dry ingredients into the wet mixture until a thick dough forms.

4. Chill the Dough:
Cover the dough and refrigerate for 30 minutes to make it easier to handle.

5. Preheat the Oven:
Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

6. Form the Cookies:
Scoop about 1 1/2 tablespoons of dough and flatten it in your hand. Place a chocolate truffle or piece of dark chocolate in the center, then wrap the dough around it to form a ball, ensuring the chocolate is fully enclosed.

7. Bake the Cookies:
Place the dough balls on the prepared baking sheet, spacing them about 2 inches apart. Bake for 10-12 minutes, or until the edges are set but the centers still appear soft.

8. Cool and Enjoy:
